Half cup of butter

Melt the butter over low heat
Remove from heat and skim off any foam that has formed on the surface, reserving it for later use
Set aside
In a saucepan, combine the onion, tarragon, vinegar, and 1/2 cup of water
Bring to a simmer in a bain-marie, whisking constantly until hot
Add the egg yolks gradually, whisking continuously as they cook and thicken
Remove from heat and stir in the reserved butter
Whisk well
Strain through a fine-mesh sieve and season to taste
Serves 8
Note: This sauce may separate at times
So, when serving, mix well
