In a small saucepan, cook the white wine vinegar, apple cider vinegar, and finely chopped green onion slowly over low heat
Continue cooking until the liquid has been reduced to 1 tablespoon
Place the egg yolks, lemon juice, salt, and pepper in the blender cup
Blend for a few seconds at high speed
Gradually add the melted butter, leaving the blender running
Finally add the cooked green onion mixture
Blend for a few more seconds
Serve 1 serving.
