500g of fresh plums (any type)

1/2 teaspoon red pepper sauce
2 tablespoons apricot jam

Remove the pits and skins from the plums and puree them in a blender or processor until smooth
Strain the mixture through a fine-mesh sieve
Combine the pureed plum mixture with the remaining ingredients in a saucepan
Cover the saucepan and simmer over low heat until the sauce thickens
Taste and adjust the seasoning as needed, adding more red pepper sauce or apricot jam if desired
Serve hot or cold with roasted pork or lamb
