250 g of fresh linguiça

250 g of cooked prosciutto, finely chopped
1/2 cup of chopped parsley
3 beaten eggs
1/2 cup of grated Parmesan cheese
black pepper to taste

Remove the skin from the linguiça and chop it
In a large frying pan, melt 1 tablespoon of butter
Add the linguiça and half of the prosciutto, and sauté for about 10 minutes or until the linguiça is lightly browned
Add the remaining prosciutto and cook the macaroni, then add the warm linguiça mixture
Add the remaining butter and parsley, stirring quickly to combine
Add the eggs one at a time, stirring quickly to combine with the pasta
Sprinkle with Parmesan cheese and black pepper, stirring once more
Serves 4-6 people
