For the basic mayonnaise
2 egg yolks
1 cup (240 ml) of oil
1 tablespoon of freshly squeezed lemon juice
Salt and black pepper to taste
Peel of 1/2 orange, without the white part
1/4 cup of freshly squeezed orange juice

Make the basic mayonnaise: in a bowl, whisk together the egg yolks with a fork or electric mixer (beater) until smooth
If preferred, use an electric mixer at low speed to mix the egg yolks and oil
Gradually add the oil while continuously whisking, until the mixture thickens
Add the lemon juice, salt, and pepper, and whisk for another minute until the desired consistency is reached
Cover and refrigerate
Soak the orange peel in hot water for 2 minutes
Drain and chop finely
Add the freshly squeezed orange juice to the mayonnaise and mix well
Serve
