4 hard-boiled eggs, diced

Crack and cut the eggs in half
Sift the yolks through a fine-mesh sieve
Cut the whites into small pieces and set aside
Melt the butter over low heat
Add the flour and cook slowly, whisking constantly until the mixture thickens; this takes about 2 minutes
Add the warm milk and continue cooking, whisking constantly over medium heat until the sauce is smooth and raises a bubble
Cook for 1 minute
Remove from heat and add the sifted yolks, salt, black pepper, and lemon juice to taste
To serve, place in a mold and sprinkle with egg whites
This is perfect for serving with broccoli or cabbage.
