Melt the butter and mix in the flour
Cook over low heat, stirring until the mixture browns slightly
This mixture can be stored in the refrigerator, airtight container, for several weeks
Mix 1 cup of this mixture with the beef broth, tomato extract, parsley, and onion speared with its two cloves
Add salt to taste
Bring to a simmer and cook slowly for 45 minutes
Let cool and strain through a sieve
If desired, add beef extract.
