1 1/2 kg of cod cut into chunks or fillets

Melt the butter in a small saucepan until it starts to simmer, but do not let it burn
No blender jar, combine the egg yolks, lemon juice, and salt
Pulse until smooth, then immediately add the hot butter in a thin stream
When finished with the butter, stop the blender
If desired, season with a bit of pepper and add the green onion
In a separate pan, combine vinegar (or wine) and enough water to cover the fish well
Bring to a boil over high heat, then reduce heat and let simmer for 6 minutes or until the fish is opaque and firm when touched
Drain the fish on paper towels
If using fillets, remove the skin
Serve with a little sauce over each piece of fish and reserve the remaining sauce
Serve 8 pieces of fish with 20 tablespoons of sauce.
