1 tablespoon of arrowroot
6 tablespoons of milk (approximately)
3 egg yolks
8 tablespoons of butter
1/2 teaspoon of lemon juice
salt and pepper to taste

Mix the arrowroot with 3 tablespoons of cold milk
Add the egg yolks and 1 tablespoon of butter
Heat over low heat
Beat with a wire whisk or electric mixer until the mixture is smooth and creamy
Remove from heat and add an additional 1 tablespoon of butter
Continue this operation, removing and re-adding to heat until all the butter has been incorporated
Finally, add a bit more milk
This sauce should not be too thick
Just before serving, season with lemon juice, salt, and pepper.
