1/4 cup sherry

Melt the butter in a double boiler; add the flour and heavy cream, whisking constantly until slightly thickened
Add seasonings
Beat the egg yolks with a fork and stir in the sherry
Combine with the previous sauce mixture and return to the double boiler
Serve immediately over chicken and toss
Yield: 1 1/2 cups for 6 servings.
