7 large cooked artichokes
3/4 cup finely chopped onion
4 tablespoons unsalted butter
2 chicken bouillon cubes, crushed
1/4 cup vodka
2 cups heavy cream
1 nutmeg, grated
Salt to taste

Strip the leaves from the artichoke hearts and scrape out the pulp with a spoon
Remove the fibrous base and cut into small pieces
Set aside
In a pan, sauté the onion and butter over low heat until golden
Add the chicken bouillon and vodka
Stir to combine
Add the artichoke pulp, stir, and cook for 1 minute
Add the heavy cream, nutmeg, and salt
Simmer, but do not let it boil
Serve hot, with Parmesan cheese shaved over top
