In a pan, melt the butter over medium heat, add the papayas and cook for 15 minutes, stirring constantly, until they're tender
Add the dark brown sugar and wine and cook for 20 minutes, stirring occasionally, until the sauce reduces and thickens slightly
Add the heavy cream and hot pepper sauce, reduce the heat and let the sauce simmer until it reaches a consistent thickness and is slightly reduced
Season with lemon juice and salt to taste
Serve with roasted or grilled meat
