Whisk together the egg, lime juice, salt, and mustard in a blender container
Add 1/4 cup of heavy cream
Blend on high speed and slowly add the remaining heavy cream until a creamy consistency is reached
Add the parsley and refrigerate until serving time
Spoon 1 cup.
