The first step is to choose a lobster of good quality
Some places nowadays sell pre-cooked lobsters in steamers
If you can't find that type, cook the lobster in boiling water for about 10 minutes
You can also cook it in a steamer, if you have a suitable pot
Heat the clay pot over high heat for 5 minutes
Then add the cornstarch and let it warm up for 10 minutes
Next, add the onion, tomato, a pinch of cumin, and salt to taste
Stir gently with a spoon until the sauce thickens and takes on a consistency
This should take about 5 minutes
Place the lobster in the pot, turning it over every 2 minutes for 2 minutes
If you think the sauce is too thin, add some water
Let it simmer for 10 to 15 minutes
When you notice that the lobster is almost done, as it starts to release from the bottom of the pot, add a pinch of coriander and a squeeze of lemon juice
You can also drizzle in some olive oil if you like, which can be served over the lobster when it's on the plate
