Wash and hull the raspberries
Reserve 6 large raspberries for garnish
Slice the remaining raspberries and place them in a bowl
Dust with sugar and refrigerate
When serving, let the ice cream soften slightly
Beat the heavy cream and milk until firm or use canned whipped cream
Add half of the orange liqueur and cognac
Mix the remaining liqueur and cognac with the ice cream
Quickly add the heavy cream
Place the sliced raspberries on plates
Cover with the ice cream mixture and garnish with the whole raspberry
Serve immediately, 6 portions.
