Combine the sugar and water in a saucepan
Melt and bring to high heat
Let it boil for 4 minutes
Add the tangerine juice, water, and egg white
Mix well
Place in the freezer until frozen
One hour before serving, let it sit at room temperature for 30 minutes
Blend or process in a blender
Return to the freezer until ready to serve
Serve in bowls with a tablespoon of vodka or champagne
