Sauté the onion in sesame oil until it's softened

Add the mustard and sauté for 1 minute. Reserve

Simmer the soy sauce with black pepper and Anaheim pepper until the liquid reduces by three-quarters

Combine the sautéed mixture with the mustard

Assemble each plate with a duck breast over the seasoned mustard, and to the side, a risotto mound shaped into a 10 cm ring
