In a small bowl, sprinkle the gelatin over the water and let it hydrate for about 5 minutes
Place it in a medium-sized saucepan and cook over low heat, stirring occasionally with a wooden spoon, until the gelatin dissolves (approximately 3 minutes)
Transfer the mixture to a large bowl, add the passion fruit juice, milk, and sugar, and mix well
Put the bowl into an ice bath filled with cold water and let the mixture thicken to a consistency similar to raw egg whites (about 10 minutes)
Keep the bowl in the refrigerator
In a stand mixer, beat the egg whites until they become stiff and firm (approximately 2 minutes)
Remove the bowl from the refrigerator, add the beaten egg whites, and mix gently with a spatula
Transfer the mixture to a large serving dish, cover it with plastic wrap, and refrigerate for at least 2 hours to allow it to set
