Blend the strawberries, sugar, and lemon juice in a blender until smooth
Heat the mixture over low heat until it thickens slightly
Remove from heat and strain through a fine-mesh sieve. Reserve
Prepare the unflavored gelatin according to package instructions
Combine the gelatin with the blended strawberry mixture and mix quickly until homogeneous
Let cool completely. Reserve
Beat the fresh heavy cream in a mixer until it forms stiff peaks
Fold into the strawberry mixture
Transfer to aluminum molds and refrigerate for at least four hours
Unmold carefully
If desired, serve with red fruit sauce.
