In a stand mixer, beat all the ingredients until smooth
Reserve 1 cup of batter and set aside
Pour the remaining batter into a greased 20.5 cm diameter pan
Bake in a moderate oven (180°C) for 30 minutes or until a toothpick comes out clean
Remove from the oven and let cool slightly
Unmold and let it cool completely
Cover the cake with the reserved batter and serve
