Preheat the oven to medium temperature
In a bowl, whisk together flour, baking soda, cinnamon, and salt
Add coconut, grated carrot, half cup chopped nuts, and mix well

In another bowl, whisk together eggs, butter, and vanilla extract
Peel and grate the apple
Add it to the egg mixture
Combine with the flour mixture, mixing well

Divide the batter among the muffin liners, filling them 3/4 of the way
Sprinkle with remaining nuts and bake for 15 minutes or until a toothpick inserted comes out clean
Remove from oven and let cool on a wire rack for 5 minutes
Unmold and serve.
