If using dried anchovies, wash and remove the bones; if using canned anchovies, simply drain the oil
Mix with butter or margarine in a pan over low heat until completely melted
Cut the mozzarella into 1 cm thick slices, coat with flour, then dip three times: egg, beaten with bread crumb to form a thick crust
Let it sit for a bit and fry in hot oil
Fry in small batches to ensure they are fully coated by the boiling oil
Arrange on a tray and top with anchovy sauce with butter, adding some capers; alternatively, use tomato sauce
