Dissolve the gelatin in boiling water
Let it cool slightly
Pulse the beets in a blender until smooth
Add the yogurt, lime juice, onion, salt, and black pepper
Mix well
Pour into a round, lightly oiled mold and refrigerate until firm
To serve, unmold and garnish to taste
