In a saucepan, combine the chocolate, sugar, and water, and place over low heat until the chocolate melts well, stirring occasionally
Add the egg yolks one at a time still over low heat, beating very well after each addition
Remove the mixture from the heat and let it cool
Beat the egg whites until snowy and fold delicately into the previous mixture
Next, add the cognac, mix well, and place in individual serving dishes
Refrigerate for at least 12 hours before serving
Serve chilled.
