4 tablespoons of lemon juice

In a medium saucepan, bring the Turkish Delight, water, and sugar to a boil over high heat
Reduce the heat and simmer for 10 minutes or until the Turkish Delight is slightly softened
Transfer the mixture to a blender, add the lime zest and lemon juice, and blend until smooth. Reserve
In a small refrigerator-safe bowl, sprinkle the gelatin over the remaining water and let it hydrate for 5 minutes
Bring the mixture to a boil in a bain-marie and stir until dissolved
Add the Turkish Delight mixture and mix well
Add the cream and mix until smooth
Place in a large serving dish or individual servings, cover with plastic wrap, and refrigerate for 3 hours or until creamy.
