1 tablespoon unsalted gelatin
1/4 cup beef broth, chilled
1/2 cup hot beef broth (using bouillon cubes)
3 onion rings
3 cans of peas
3/4 cup fresh or canned whipped cream
Salt and pepper to taste, and 1 dash of paprika

Soak the gelatin in a bowl and add the cold beef broth, reserving
Heat the remaining consommΓ© and pour it over the softened gelatin
Stir until the gelatin dissolves
Blend the peas and onion in a blender to obtain a homogeneous mass; season and add the chilled gelatin mixture with the whipped cream, tempered and blended
If desired, you can add a few drops of green food coloring
Pour the mixture into a ring mold soaked in water and refrigerate for at least two hours
Unmold over a serving plate and fill the inside of the ring with tomato salad
Serve with roasted chicken or duck.
