1 envelope of unflavored gelatin
1/4 cup of cold water
3/4 cup of boiling water
1/3 cup of sugar
2 tablespoons of lemon juice
1/2 tablespoon of grated lime zest
3/4 cup of guava, mashed with a fork
4 egg whites
For the sauce:
200g of guava, cut into small pieces
3/4 cup of water
1 tablespoon of lemon juice
1 envelope of unflavored gelatin
1/4 cup of cold water
3/4 cup of boiling water
1/3 cup of sugar
2 tablespoons of lemon juice
1/2 tablespoon of grated lime zest
3/4 cup of guava, mashed with a fork
4 egg whites
For the sauce:

Dissolve the gelatin in 1/4 cup of cold water
Mix in boiling water and stir until gelatin is dissolved
Combine sugar, lemon juice, grated lime zest, and mashed guava
Blend in a blender
Chill in the refrigerator until slightly thickened
Blend again until smooth
Fold in beaten egg whites
Chill in the refrigerator until firm
Mold and serve with the sauce: combine all ingredients in a pan
Heat over low, stirring constantly, until melted and thickened
Remove from heat and let cool
Serves 6.
