In a small refrigerator-proof bowl, sprinkle the gelatin over the water and let it hydrate for a few minutes
Heat the mixture in high heat, stirring constantly, until the gelatin is dissolved
In a large bowl, mix together the lemon juice, grated lime zest, and sweetened condensed milk
Add the melted gelatin and heavy cream, and beat with an electric mixer until thick (2 minutes). Reserve
Beat the egg whites in a separate bowl until stiff peaks form
Fold into the cream mixture
Distribute among 8 individual cups or 1 large cup
Cover with plastic wrap and refrigerate until creamy (about 2 hours)
Garnish with lime zest and grated lime zest to taste.
