Quickly sauté the passionfruit in melted butter with brown sugar until tender
Add the heavy cream and reserve
Omelette
Beat the yolks with heavy cream and brown sugar. Reserve
Whip the whites to a snow-like consistency and fold into the yolk mixture
Melt the butter in a skillet and pour in the eggs
Cook until the bottom is golden and the top is dry
Slide onto a plate, spread the passionfruit filling, and dust with confectioner's sugar
Fold in half and serve.
