3/4 cup passionfruit juice
1/2 cup passionfruit seeds without pulp

5 sweet passionfruits
2 unsweetened gelatin envelopes
1 cup natural yogurt

Line a strainer with four sheets of paper towels
Place the yogurt on top and let it drain for four hours over a bowl
Syrup
In a small saucepan, cook the passionfruit juice with seeds over low heat for 30 minutes or until reduced to 1/2 cup
Let it cool
Mousse
Strain the pulp of the passionfruit through the strainer to obtain equivalent to 1/2 cup of juice. Reserve
In the same strainer, strain the water
Transfer to a saucepan and add gelatin
Bring to a boil, stirring constantly until gelatin dissolves
Add reserved juice, salt, and orange-lime juice
Add yogurt and mix well
Grease mold with oil and pour in the sweet treat
Cover with syrup and let it sit in the refrigerator for six hours or until firm
Unmold and serve.
