2 1/4 cups of diced watermelon without seeds and rind
4 tablespoons of confectioner's sugar
3 tablespoons of pineapple chunks
1 envelope of unsweetened gelatin
1/4 cup of cold water
1 cup of natural yogurt

Mash half the watermelon in a blender
Add the confectioner's sugar and pineapple chunks and blend well
Dissolve the gelatin in cold water and heat it over low heat
Mix with the blended watermelon and add the remaining watermelon cubes
Pour into the refrigerator to chill slightly
Beat the yogurt with a hand mixer and fold it gently into the chilled mixture
Stir and distribute among the serving cups
Pour into the refrigerator to set firm
Before serving, garnish with frozen watermelon cubes and lime zest strips
