In a stand mixer, beat the egg whites until snow-like
In a small saucepan, combine the sugar and water over medium heat, stirring until the sugar dissolves
Let it simmer without stirring until it reaches the desired firmness
(Transfer some warm syrup to a bowl with cold water
If you can shape it into a ball that holds its form, it's ready.)
With the stand mixer still running, gradually add the warm syrup to the egg whites until stiff peaks form
Place in a large serving dish or individual servings, top with orange segments and sprinkle with shredded coconut
Refrigerate for about 2 hours before serving
