3/4 cup of sugar
2 cups of water
4 tablespoons of cold water
1 envelope of unflavored gelatin
1 cup of fresh or concentrated passion fruit juice
2 egg whites

In a saucepan, combine 3/4 cup of sugar and 2 cups of water
Bring to a boil, then reduce heat and simmer for five minutes
While that's cooking, place 4 tablespoons of cold water in a small bowl
Sprinkle the gelatin over the top
Let it sit for a few minutes
Add hot liquid and stir until dissolved
Let it cool slightly
Add passion fruit juice and stir well
Pour into a shallow container or ice tray and place in the freezer or refrigerator to chill until slightly firm, stirring two or three times
When partially frozen, beat egg whites
Add sugar slowly and beat until stiff peaks form
Remove the passion fruit mixture from the freezer and place in a bowl
Beat well until smooth consistency is reached
Add whipped cream and beat again
Place in the freezer or refrigerator to set.
