1 to 1.5 cups of all-purpose flour - 150g

Cook the sweet potatoes
Peel, mash, and refrigerate for a few hours or overnight
Add the eggs and salt
Mix well and place on a lightly floured surface
Knead well, adding more flour as needed to obtain a smooth and pliable dough
Form rolls with the dough and cut into pieces of about 2cm
Squeeze each piece in the middle and let it fall into a large pot with 4 liters of boiling salted water
Cook without covering for 3-5 minutes, or until the dumplings rise to the surface
Remove with a slotted spoon
Serve with melted butter or margarine and grated cheese, or with tomato sauce
Yield: 6 servings.
