Fry the spinach in a pan over low heat until wilted
Squeeze out any excess moisture and chop finely
Mix with ricotta, egg, and grated cheese
Season with salt, pepper, and mix well
Remove small portions of the dough with a spoon and coat in flour
Cook in boiling salted water
When they rise to the surface, remove them with a skimmer
Serve with tomato sauce and grated cheese.
