In a skillet, place the milk and cheese
Heat over low until the cheese is melted
Remove from heat and let cool slightly
Beat the egg yolks and slowly add to the milk and cheese mixture, stirring carefully, leaving it slightly thickened
Whisk the egg whites in a separate bowl until stiff and fold into the egg yolk mixture, stirring gently
Heat a non-stick skillet or oven-safe pan over medium heat
Add the melted butter or margarine
Pour the egg mixture into the skillet and cook for about 5 minutes, or until the omelette starts to set and the bottom is firm
Place the skillet in a preheated oven at moderate temperature (170°C) and bake for 15 minutes, or until the omelette is cooked through and golden brown on top
Serve hot with gelato on top and dust with sugar, if desired.
