Salt to taste
2 tablespoons of butter or margarine

Beat the whites until snowy
Add the yolks and beat for another minute
Season with salt
Place the butter or margarine in a baking dish that can go into the oven
Heat it over low heat until melted
Pour the beaten eggs into the baking dish
Fry until the bottom is golden brown
Remove from heat and put it in a preheated oven (200°F)
Bake for about 5 minutes, or until the eggs are cooked
Remove from the oven
Place on a plate and fold the omelette in half
Serve with cheese sauce or mushroom duxelles
