2 slices of white bread - 50g
2 tablespoons (1/4 cup) of butter or margarine - 30g
2 eggs

Cut out the center of the bread slices with a wine glass, about 5cm in diameter
Gently toast the bread slices
In a large frying pan, melt the butter over medium heat
Place the two bread slices, side by side, in the frying pan
Break one egg into each hollowed-out circle, allowing the yolk to fall to the center (some white will spread)
Reduce heat, sprinkle with salt and black pepper to taste
Cover and cook slowly for 2-3 minutes
Serve warm
