Filling
1/4 cup of olive oil
1 teaspoon of salt
1 kg of chicken thighs
4 cloves of garlic
1 medium onion, finely chopped
1 red bell pepper
1/3 cup of red chili flakes
Dough
1 cup of water
1 cup of cornmeal
1/4 cup of all-purpose flour
1/4 cup of cornstarch
1/2 cup of butter
1 teaspoon of salt
2 eggs
Filling

Filling
Cook all the ingredients for 30 minutes or until the chicken is tender
Debone the chicken
Process the chicken and its seasonings through a blender
Dough
In a pan, bring the water, butter, and salt to a boil
Add the cornmeal, cornstarch, and flour, stirring until it detaches from the bottom of the pan
Transfer to a bowl
Add one egg and mix
Repeat the process with the other egg
Assembly
Remove one portion of the dough and shape into a 5 cm diameter disk
Stuff with chicken and form a ball
Repeat the process until all ingredients are used up
Fry in hot oil just to brown, then drain on paper towels.
