Cook the onion peels in plenty of water until they're well darkened
Add 8 or 10 eggs and cook them for about 10 minutes
Chill them in cold water
Mash the eggshell with a spoon to crack it
Prepare a mixture of 1 liter and a half of water and 300 grams of salt
Heat it up for a few minutes
Place the eggs in this mixture and let them rest for 24 hours
Peel and cut them in half from top to bottom
Remove the yolk and mash it with a bit of mustard, salt, and pepper
Put the yolk back into the white like a filling
