Bring the sugar and water to a boil
After it comes to a boil, let it simmer for 5 minutes
Remove from heat and let cool
Add the egg yolks, bring back to a boil again and stir until thickened slightly
If desired, dust with cinnamon
Let set at room temperature for 10 minutes.
