For the shaved eggs
2 egg whites
4 tablespoons of sugar

1 1/2 cups of milk
1 tablespoon of grated ginger
1/2 cup of coconut milk
2 yolks

Beat the egg whites until frothy
Add the sugar and beat well, until stiff peaks form
In a shallow pan, bring water to a simmer
Let it cook for 1/2 minute, constantly adding hot water
Remove with a slotted spoon and place on absorbent paper. Reserve
In another pan, combine milk, ginger, and coconut milk, bringing to a simmer
While this is cooking, beat the yolks with sugar until a clear cream forms, then add to the milk mixture
Stir well
Cook until slightly thickened, but do not let boil
Remove from heat and strain through a fine-mesh sieve
Pour into a bowl and arrange the shaved eggs on top
Refrigerate until serving time
Serve 4 portions
