Start by making the meringue balls
Beat the egg white with a pinch of salt
When it becomes firm, slowly add 2 tablespoons of cornstarch, beating constantly
When you lift the mixer and the mixture still holds its shape, stop
Don't overbeat
Now add the gelato and mix well
Heat the milk in a saucepan
As it's cooking, slowly pour the meringue mixture into the milk, spoon by spoon
Let it cook on low heat for 5 minutes, until the meringues are very firm
Remove with a slotted spoon and place on three layers of paper towels
Reserve the milk
Now beat the eggs and yolk
Add 1/4 cup of cornstarch and a pinch of salt
Add the milk (which should have cooled slightly by now)
If necessary, add more milk to complete 2 cups, then add it
Place in a water bath, stirring constantly until thickened slightly
Remove from heat and add grated orange peel
Place in a bowl and top with the meringues
Refrigerate
