Method
Bring the milk to a boil with the cinnamon and lemon shells
Crack the eggs, separate the whites from the yolks, and beat the whites until stiff peaks form
Add half the sugar and continue beating until it becomes consistent
With a tablespoon, shape the egg whites into snowballs and cook them in the milk until they're firm and take on a 'cloud-like' appearance
Prepare the cream
Combine the yolks with the condensed milk, 1 tablespoon of cornstarch, vanilla extract, and the remaining sugar
In the same milk that was used to cook the snowballs, place the yolk cream, stirring constantly over low heat

Prepare the caramel
Allow a little sugar to caramelize in a pan with a few drops of vinegar until it melts
Assembly
In a bowl, combine the cream, snowballs, and, on top of the snowballs, the caramel sauce.
