Place the carrots in a pot, cover them with water, seal, and cook for about 7 to 10 minutes
Drain them and reserve the liquid
Put the carrots in a bowl
To the carrot liquid, add vinegar, sugar, and cinnamon
Heat it up until it starts boiling and pour this mixture over the carrots
Let it cool, seal, and refrigerate for one day to the next
If desired, you can store it in the refrigerator for up to 3 weeks
Serve as an appetizer or accompaniment
