2 packets of active dry yeast for bread (30g)

1.1 kg of wheat flour
Mix in a blender, at the pulsar speed, the yeast and salt
Add the milk, water, and panettone extract and blend again at the pulsar speed
Add the eggs and blend for a few seconds
Transfer this liquid to a mixer and add the butter
Mix at low speed and add the candied fruit gradually
Blend until smooth and turn off the motor
Gradually add 1 kg of flour and mix until a sticky dough forms
Dust a clean surface with the remaining flour and place the dough
Start working the dough with your hands until it starts to come away from the surface and your hands
Divide the dough into four parts and add 1/4 cup of candied fruit to each part
Work the dough for a bit more to incorporate the fruit well and place each mass in a proper panettone mold of 500g
Bake in a medium preheated oven until golden brown.
