1 Remove the sorbet from the freezer 15 minutes before preparing the recipe to allow it to soften
Cut a horizontal slice of the panetone, up to its base
2 With a sharp knife, remove the core, leaving about 2 cm around the entire circumference
Be careful not to perforate the sides
Fill with sorbet and replace the cut slice
Wrap in plastic wrap and place in the freezer for three hours
Remove from the freezer one hour before serving.
