Make the pancakes according to the basic recipe
Prepare the filling: combine all ingredients in a pan and heat, stirring constantly until the cheese melts and the cream thickens
Let it cool slightly and fill the pancakes
Set aside
Prepare the sauce: sauté the onion in oil until it starts to brown
Add the tomato, cover the pan and simmer for 20 minutes over low heat
Season
Let it cool a bit and then puree in a blender
Strain and serve over the pancakes
