3/4 cup all-purpose flour

1 cup mascarpone cheese passed through a fine-mesh sieve
1 tablespoon honey
1 tablespoon lime juice

A pinch of grated nutmeg

4 large egg whites beaten until stiff
4 whole eggs

Mix all ingredients except the whipped egg whites well, then gently fold in the egg whites
Fry pancakes using 1/4 cup batter for each pancake
Spread a small amount of batter with a spatula, and fry both sides.
