Place the ricotta cheese, or cottage cheese, in a blender
Add the condensed milk gradually, blending until smooth
Add the lime juice, grated lime zest, and vanilla extract
Refrigerate for 1 1/2 to 2 hours
To assemble, spread approximately 1/4 cup of the mixture over each crepe, and roll like a croissant
Serve the crepes covered with fresh fruit pieces, cut into bite-sized pieces
This dessert is very sweet; therefore, it's not necessary to add sugar to the fruit
